Cut into small cubes 100 g butter, add 200 g flour, mash to a state of crumbs, add the sea salt, 85 g sugar, 3 egg yolks (proteins we do not need), with zest of 1 lemon, knead the dough elastic. Form the dough from a log, put on tape, wrap, clear for an hour in the refrigerator.
