Chop finely 150 gr. dried apricots in a bowl and mix with 225 g. raisins.
Add 1/2 liter of vinegar and cover the bowl with cling film. Leave the dried fruit in the marinade for 6-8 hours.
Put the contents of the bowl into the pan.
Peel and finely chop 2 onions and also add them to the pan.
Wash 1-2 chilli, remove the seeds from them and chop finely. Also, put them in a saucepan. You can put a smaller amount of chili or do without it if you do not like spicy food.
Add to the pan 225 grams. cane sugar, 2 tablespoons ground ginger, 1 tablespoon ground coriander and mustard seeds.
Put the pan over high heat and bring the contents to the boil. Stir frequently to avoid burnt.
Reduce heat to low and cook for about 1 hour. Continue stirring often.
Remove chutney from heat and cool.
